- 12 medium new potatoes
- 16 slices crumbled bacon
- 1/2 c. melted butter
- 2 c. grated Cheddar cheese
- 1/4 c. chopped parsley
- salt and pepper
Directions

1Wash and cube potatoes with skins on.

2Cook in boiling water until just barely tender.

3Remove from heat and drain.

4In a 2-quart casserole place a layer of potatoes, half of the bacon, half of the cheese and half of the butter.

5Season with salt and pepper.

6Repeat layers.

7Heat in oven at 350° for about 20 minutes until cheese is bubbly.

8Remove from oven and garnish with parsley.

9Serves 6 to 8.
