  • 12 medium new potatoes
  • 16 slices crumbled bacon
  • 1/2 c. melted butter
  • 2 c. grated Cheddar cheese
  • 1/4 c. chopped parsley
  • salt and pepper

Directions

    Wash and cube potatoes with skins on.

    Cook in boiling water until just barely tender.

    Remove from heat and drain.

    In a 2-quart casserole place a layer of potatoes, half of the bacon, half of the cheese and half of the butter.

    Season with salt and pepper.

    Repeat layers.

    Heat in oven at 350° for about 20 minutes until cheese is bubbly.

    Remove from oven and garnish with parsley.

    Serves 6 to 8.
