- 1 lb. yellow split peas
- 1 lb. ham hocks
- 1 onion
- 1 Tbsp. chopped fresh thyme or dried
- 10 c. water
- 2 c. diced potatoes
- 2 c. rutabaga
- 2 c. celery
- 1/2 c. chopped leek
- 1 Tbsp. salt
- chopped fresh parsley or thyme for top
Directions

1Combine yellow split peas, ham hocks, onion (chopped fine), chopped thyme and water in large Dutch oven.

2Bring to boil; reduce heat, cover and simmer until tender, 1 1/2 hours.

3Add potatoes, rutabaga, celery root, 1 1/2 cups chopped leek and salt. Return to simmer and cook, covered, stirring occasionally, 30 or 40 minutes more, until vegetables are very tender.

4Remove ham hocks; discard skin and bones.

5Chop ham fine and return to soup. Sprinkle chopped fresh parsley over top.
