Ingredients

  • 1 lb. yellow split peas
  • 1 lb. ham hocks
  • 1 onion
  • 1 Tbsp. chopped fresh thyme or dried
  • 10 c. water
  • 2 c. diced potatoes
  • 2 c. rutabaga
  • 2 c. celery
  • 1/2 c. chopped leek
  • 1 Tbsp. salt
  • chopped fresh parsley or thyme for top

Directions

    Combine yellow split peas, ham hocks, onion (chopped fine), chopped thyme and water in large Dutch oven.

    Bring to boil; reduce heat, cover and simmer until tender, 1 1/2 hours.

    Add potatoes, rutabaga, celery root, 1 1/2 cups chopped leek and salt. Return to simmer and cook, covered, stirring occasionally, 30 or 40 minutes more, until vegetables are very tender.

    Remove ham hocks; discard skin and bones.

    Chop ham fine and return to soup. Sprinkle chopped fresh parsley over top.
