  • 1 3/4 cups white flour organic
  • 3/4 cup unsweetened cocoa powder organic
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 cup strong coffee at room temperature
  • 1/2 cup vegetable oil
  • 2 eggs
  • 8 ounces cream cheese block of
  • 4 tablespoons white sugar organic
  • 2 eggs
  • 2 tablespoons flour organic
  • 1 cup mini chocolate chips

Directions

    Preheat the oven to 350 degrees F.

    Grease or line the cupcake pans.

    Whisk together the brown sugar, flour, cocoa powder, baking soda/powder, cinnamon and salt.

    Mix in the buttermilk, coffee, oil and eggs.

    Fill each cupcake about 1/2 full.

    In another bowl, beat together the cream cheese and sugar.

    Mix in the eggs and flour.

    Spoon a tablespoon of the cheesecake mixture over each cupcake.

    Sprinkle with chips.

    Bake for 20-25 minutes, or until an inserted toothpick comes out clean.
