Ingredients

  • 4 1/2 ounces hazelnuts
  • 4 1/2 ounces almonds
  • 2 1/2 ounces raisins
  • 2 1/2 ounces dried apricots
  • 2 1/2 ounces dried figs
  • 2 1/2 ounces prunes
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 2 cups oatmeal
  • 2/3 cup whole wheat flour
  • 2 medium eggs
  • 1/4 cup sugar
  • 1/2 cup honey

Directions

    Finely grind half the hazelnuts and half the almonds in a food processor and finely chop the rest. Either chop or process the fruit until all the pieces are small. In a bowl, mix the nuts, dried fruits, cinnamon, ginger, oatmeal and flour.

    Preheat the oven to 325°F. Crack the eggs into a bowl, and slowly add the sugar, beating until creamy. Add the honey and mix well. Add the egg mixture to the dry ingredients.

    Line a 6 x 9 inch jelly roll pan with parchment paper. Spoon the mixture onto the pan and smooth with the back of a metal teaspoon. Bake for about 25 minutes, until lightly browned and firm. Remove and while still warm, cut into 12 pieces. Allow to cool in pan.
