  • 1 cup Quick cooking oats
  • 1 1/2 cup boiling water
  • 1 3/4 cup Coconut flour
  • 1/2 tsp xanthum gum
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup butter, softened
  • 1 cup granulated sugar or sugar substitute such as splenda
  • 1 cup firmly packed light brown sugar
  • 2 eggs or equivalent of egg substitute
  • 1 tsp vanilla extract

    Preheat oven to 350F.

    Grease 9x5 loaf pan.

    Place oats in a small heatproof bowl.

    Add boiling water, stir, & set aside.

    Combine flour, xanthum gum, baking soda, salt, & cinnamon in a small bowl & mix well.

    Place butter in a large bowl.

    Beat with an electric mixer set at high speed until creamy.

    Add both sugars gradually, beating constantly until well blended.

    Add eggs, one at a time, beating well after each addition.

    Beat in vanilla.

    Gradually add flour mixture to creamed mixture & beat until smooth.

    Stir in oats mixture.

    Spoon batter into prepared pan.

    Bake until toothpick inserted into center comes out clean, about 1 hr.

    Cool in pan for 10 minutes.

    Transfer bread to wire rack to cool completely.
