Oatmeal Waffles

- 1 1/2 c. all-purpose flour
- 1 c. quick cooking rolled oats
- 1 Tbsp. baking powder
- 1/4 tsp. salt (optional)
- 2 eggs, slightly beaten
- 1 1/2 c. milk
- 6 Tbsp. butter, melted
- 2 Tbsp. brown sugar
- 1/2 c. chopped pecans (optional)
- 1/2 tsp. cinnamon
Directions

1In large bowl, stir together flour, oats, baking powder, cinnamon and salt; set aside.

2In small bowl, stir together eggs, milk, butter and brown sugar.

3Add to flour mixture; stir until blended.

4Pour batter onto grids of preheated lightly greased waffle iron (amount will vary according to size of waffle iron). Sprinkle a few chopped pecans on top of batter; close lid quickly; do not open during baking.

5Remove cooked waffles and serve with maple syrup; fresh fruit and yogurt, etc.

6Yields 12 waffles (4-inch squares).
