Old-Fashioned Apple Pies

  • 6 to 8 large, tart apples
  • pastry for 2-crust pie
  • 1 c. sugar
  • 2 tsp. flour
  • 1/4 tsp. nutmeg
  • 1/2 tsp. cinnamon
  • 2 Tbsp. oleo or butter

    Pare and core apples; cut in quarters and slice thin.

    Line a 9-inch pie pan with pastry.

    Mix sugar, flour and spices.

    Rub a little sugar mixture into pastry.

    Arrange sliced apples, overlapping in pan.

    Dot with butter.

    Cut slits in top crust. Moisten edges of lower crust and place top crust over apples; press edges together, trim and flute edges.

    Brush with slightly beaten egg white, if desired, or sprinkle lightly with sugar. Bake at 425° for 40 to 45 minutes or until apples are tender.
