Old-Fashioned Egg Cornbread

Ingredients

  • 2 c. self-rising corn meal
  • 2 c. buttermilk
  • 2 eggs
  • 1/2 tsp. salt
  • 3 Tbsp. Crisco oil

Directions

    Put oil into a 10-inch well-seasoned skillet and preheat at 400° until very hot.

    Mix all other ingredients together and when oil is hot, pour about half into mixture and stir.

    Then pour batter into the pan with the hot oil; do not stir now.

    This will make a nice crust and should keep bread from sticking.

    Bake 35 minutes at 400° or until top is brown.

    Take from oven and turn onto a plate immediately.

    Serve while hot.

    Recipe can be cut in half except for oil and using same 10-inch skillet.

    Will make a nice, thin, crusty bread.
