- 6 boneless chicken breasts (if very big, cut in half) or 6 pork chops
- 3 Tbsp. oil
- 1 large onion, sliced
- 2 Tbsp. chili powder
- 1 green bell pepper, chopped
- 1 c. uncooked rice
- 1 (8 oz.) can tomato sauce
- 1 1/2 c. water
- 2 tsp. salt (I only used 1)
Directions

1Brown chicken or pork chops in oil in heavy pan or skillet. Remove and add onions.

2Remove and stir in chili powder.

3Add pepper slices, rice, tomato sauce, water and salt.

4Bring to a boil.

5Pour into a large casserole dish.

6Place chicken or pork and onion slices on top of rice mixture.

7Cover and cook at 375° for 1 hour or until liquid is absorbed.
