  • 1/4 avocado diced
  • 1 tablespoon light sour cream
  • 1/2 jalapeno finely diced
  • 2 scallions including the stem, finely diced
  • 1 tablespoon prepared salsa
  • lime
  • juice
  • 4 eggs
  • salt and ground black pepper
  • 2 teaspoons butter
  • 1/2 cup chihuahua cheese may substitute mozzarella, shredded

Directions

    Mix the avocado, sour cream, jalapeno, scallions, salsa, and lime together in a bowl.

    Whisk the eggs together and add salt and pepper.

    Heat a nonstick skillet at medium-high heat, add 1 teaspoon of butter and let melt. Pour the eggs into the skillet and let cook nearly through.

    Sprinkle the cheese and half the avocado mixture onto half of the omelette and fold in half. Cook for 20 seconds and place onto a serving dish.

    Repeat with the other two eggs.
