  • 2 cups all-purpose flour
  • 1/2 cup butter chilled, cubed
  • 1/3 cup milk
  • 2 tablespoons olive oil
  • 3 onions thinly sliced
  • 1 red onion thinly sliced
  • 4 slices bacon cut into strips
  • 1 sprig rosemary leaves strips
  • 2 ounces camembert cheese sliced
  • mixed salad to serve

    Preheat oven to 400°F. Line a baking sheet with parchment.

    Sift flour into a bowl. Using fingertips, rub in butter until mixture resembles breadcrumbs. Add milk gradually until dough forms. Turn out onto lightly floured surface and knead lightly. Shape into a disc. Wrap in plastic wrap and chill 20 minutes.

    To make filling: heat oil in a large skillet on low. Saute onions 10-15 minutes, until golden and caramelized. Increase heat to medium. Add bacon and cook 4-5 minutes. until browned. Stir in rosemary and season to taste. Allow to cool.

    Roll out pastry between 2 sheets of parchment to an 11-inch circle. Transfer to baking sheet. Pile onion mixture onto pastry, leaving a 2-inch border. Fold edges over filling. Top with cheese. Bake 25-30 minutes, until crust is golden. Serve warm with salad.
