Marinated Mushroom Salad

Ingredients

  • 1 lb. fresh mushrooms
  • 1 c. salad oil
  • 1/3 c. wine vinegar
  • 2 Tbsp. finely minced onion
  • 1/2 tsp. salt
  • 1 tsp. sugar
  • 1/2 tsp. ground black pepper
  • 1/4 tsp. mustard (powdered)
  • about 4 c. cauliflower
  • 1 c. sliced celery
  • 1 green pepper
  • 8 cherry tomatoes

Directions

    Thoroughly combine oil, vinegar, onion, salt, sugar, black pepper and dry mustard in large bowl.

    Rinse and slice thin the mushrooms and add to marinade.

    Toss to coat.

    Slice cauliflower flowerets.

    Slice celery.

    Cut the green pepper in strips.

    Add all to mushrooms and let marinate at least 1 hour.

    Just before serving halve the cherry tomatoes and add.
