Ingredients
- 1/4 c. olive oil
- 2 large onions, sliced very thin
- 1 Tbsp. flour
- 2 Tbsp. milk
- 6 eggs, beaten
- salt and freshly ground pepper (black)
- 1/8 tsp. nutmeg
Directions

1Heat olive oil in a heavy frying pan.

2Add the onions.

3Cook, stirring frequently, over lowest possible heat until the onions are soft and golden.

4Stir the flour into the milk.

5Combine with the eggs and beat to mix thoroughly.

6Season with the salt, pepper and nutmeg.

7Pour the egg mixture over the onions.

8Cook until the Frittata is well set at the bottom and golden brown.

9Put a plate, the size of the frying pan over the Frittata.

10Turn the frying pan over so that the Frittata is on the plate, cooked side up.

11Slide back into frying pan and cook until set.

12Cut into wedges and serve hot or lukewarm.
