  • 5 large yellow onions
  • 10 slices bacon
  • 3/4 lb. natural Swiss cheese, grated
  • 3/4 stick butter or oleo
  • 1/4 lb. pkg. crackers, crumbled
  • 1 c. sour cream
  • 3 eggs
  • paprika
  • salt and pepper to taste

Directions

    Slice onions; add salt and pepper and smother in butter until tender.

    Cover bottom of casserole with cracker crumbs.

    Cook bacon until crisp.

    When onions are very tender, place on top of crackers along with butter they were cooked in.

    Crumble bacon on top of onions.

    Top with grated cheese.

    Beat eggs well; add sour cream and blend well.

    Pour over the cheese.

    Sprinkle with paprika.

    Cover with foil and bake at 350° until set, about 35 minutes.
