  • 3 lg sweet onions (Vidalia or WallaWalla are good)
  • 2 1/4 c flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/4 c yellow cornmeal
  • 2 c beer
  • 1 egg, beaten
  • vegetable oil for frying

    Peel onions, cut into 3/8 thick slices and separate into rings. Soak rings in large bowl ice water for 30 min. Drain on paper towels.

    Combine flour, baking powder, salt & cornmeal. Mix well. Add beer and egg; stir until smooth. Chill this batter 15 min

    Dip onion rings into batter coating well. Fry in 375 deep fat for 3-5 min or until golden on both sides and crisp. Drain and serve immediately.
