Ingredients
- rind of 4 large, thick-skinned oranges
- 1 1/2 c. water
- 1 tsp. soda
- 2 c. sugar
- 3 1/2 c. flour
- 4 tsp. baking powder
- 1/2 tsp. salt
- 1 c. chopped pecans
- 2 eggs, beaten
- 2/3 c. milk
- 3 Tbsp. melted butter
Directions

1Boil orange rind in 1 cup of water with soda for 4 minutes. Drain and rinse 3 times with fresh water.

2Cut or chop rind into very small pieces.

3Combine rind with remaining 1/2 cup water and 1 cup sugar.

4Boil for 3 minutes; set aside to cool.

5Combine remaining 1 cup sugar, flour, baking powder and salt together.

6Add pecans.

7To the cooled orange mix, add eggs, milk and melted butter.

8Combine mixtures and mix well.

9Bake in 3 small greased loaf pans at 325° for 45 to 55 minutes.
