- 6 (4 ounce) red snapper fillets (1/2-inch thick)
- 3 tablespoons water
- 2 tablespoons frozen orange juice concentrate, thawed (undiluted)
- 2 teaspoons olive oil
- 12 teaspoon grated orange rind
- 18 teaspoon ground nutmeg
- 1 dash fresh ground pepper
- salt, to taste
Directions

1Preheat oven to 350F.

2Arrange fillets in a 13x9 inch baking dish sprayed with cooking spray.

3Combine water and remaining ingredients; pour over fillets.

4Bake, covered, at 350 F for 10 minutes.

5Remove cover and bake an additional 10 minutes or until fish flakes easily with a fork when tested.

6Carefully transfer fillets to serving platter and garnish with orange wedges if desired.
