- 4 Tbsp. oil
- 1 1/2 lb. boneless, skinless chicken breasts
- 2 c. chicken broth
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. ground ginger
- 8 tsp. cornstarch
- 3 Tbsp. water
- 1 1/2 c. sliced carrots
- 1 1/2 c. broccoli florets
- hot, cooked rice
Directions

1Cut chicken in 1/2-inch strips.

2Heat 2 tablespoons oil in a large skillet.

3Stir-fry chicken 3 to 4 minutes.

4Add chicken broth, salt, pepper and ginger.

5Simmer for 5 minutes.

6Heat 2 tablespoons oil in a separate skillet and stir-fry vegetables for 5 minutes.

7Blend cornstarch with water and stir into chicken. Add cooked vegetables and serve over rice.
