Ingredients
- 1/3 c. vegetable oil
- 1/3 c. (2/3 stick) butter
- 1 c. all-purpose flour
- 1 tsp. salt
- 2 tsp. black pepper
- 2 tsp. paprika
- 1 tsp. garlic salt
- 8 to 9 chicken pieces (legs, thighs, breasts)
Directions

1Place oil and butter in shallow cooking pan (jelly roll pan is perfect).

2Put in heated 375° oven to melt.

3Set aside.

4In large paper sack, combine flour and seasonings.

5Roll chicken pieces, 3 at a time, in melted oil-butter mixture; drop in sack and shake to cover.

6Place on dish or waxed paper.

7Place chicken in pan, skin side down.

8Bake for 45 minutes; turn and bake 5 to 10 minutes longer or until top crust begins to bubble.

9Serve hot or cold, but crust texture is better if chicken is not refrigerated before eating.

10Pan drippings make good gravy for mashed potatoes. Serves 4 or 5.
