- 1 can whole oysters (8 oz.)
- 1/2 lb. pork, boned and sliced thin
- 1 Tbsp. vegetable oil
- 1 medium green pepper, diced
- 1 small onion, diced
- 1 clove garlic, pressed
- 1 can chicken broth (14 1/2 oz.)
- 2 medium tomatoes, chopped
- 1 c. uncooked brown rice
- 1 tsp. thyme, crumbled
- 3/4 tsp. salt
- 1/2 tsp. turmeric
- 1 medium zucchini, shredded
Directions

1Drain oysters; reserve 1 tablespoon liquid.

2Brown pork in oil.

3Add green pepper, onion and garlic.

4Saute.

5Add reserved oyster liquid and remaining ingredients except zucchini.

6Cover and simmer 30 minutes.

7Add zucchini, then oysters.

8Heat through and serve.
