- 2 doz. oysters
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1/2 tsp. salt
- few grains cayenne pepper
- 4 c. milk
- whipping cream
- minced parsley
Directions

1Inspect the oysters for bits of shell.

2Chop, if desired; save the liquid.

3Melt butter in a heavy bottomed saucepan.

4Add flour and seasoning gradually and stir until quite free of lumps.

5Add milk and oyster liquid a little at a time and stir until mixture boils.

6Add oysters; simmer for 5 minutes.

7If too thick, add more milk.
-
8Season to taste and serve in a heated tureen.

9When serving, top with whipped cream and parsley.

10Yields 4 to 5 servings.
