- 1 c. chopped onion
- 1 Tbsp. margarine
- 1 1/2 c. cooked wild rice
- 1 can salmon, drained and flaked
- 3/4 c. mayonnaise
- 1 egg, beaten
- 1 1/2 c. Parmesan cheese
- 1 (10 oz.) frozen chopped broccoli, thawed and drained
- 1 1/2 c. shredded Cheddar cheese
Directions

1Saute onions in margarine.

2Stir in rice and salmon.

3Add combined mayonnaise and egg; mix lightly.

4Layer half the salmon mixture, Parmesan cheese and broccoli in 1-quart casserole.

5Cover with 1 cup Cheddar cheese.

6Repeat layers, ending with broccoli. Bake at 350° for 30 minutes.

7Sprinkle with remaining Cheddar cheese; continue baking until cheese is melted.

8Makes 6 to 8 servings.
