Ingredients

  • 1 1/2 lb. chicken pieces
  • 3 Tbsp. olive oil
  • 3 links chorizo
  • 1/2 c. smoked ham, cubed
  • 1 yellow onion, chopped
  • 1 green pepper, chopped
  • 1 tomato, chopped
  • 2 cloves garlic, crushed
  • 1 1/2 c. long grain rice
  • 2 (10 oz.) cans chicken broth
  • 1 tsp. saffron
  • 1 lb. raw shrimp, shelled and deveined
  • 1/4 c. pimento strips
  • 1/2 pkg. frozen green peas

Directions

    Brown chicken pieces in olive oil.

    Add chorizo and break apart with a fork. Add ham and brown slightly. Stir in onion, green pepper, tomato and garlic. Push vegetables and meat aside. Add rice to center of pan and saut 5 minutes.

    Then add chicken broth and stir in saffron. Cover. Simmer 25 minutes. Stir in shrimp, pimento and peas. Simmer 5 to 10 minutes.
