- 5 tbsp butter
- 2 cup red onion, chopped
- 1 cup chopped red pepper
- 2 tsp salt
- 2 tsp pepper
- 1 1/2 tbsp minced garlic, about 5 cloves
- 1 lb zucchini, sliced
- 2 cup broccoli florets
- 2 cup frozen peas and carrots
- 1 can diced tomatoes with juice
- 1/2 cup grated cheese
- 1/2 cup thinly sliced basil
- 1/3 cup olive oil
Directions

1Cook pasta according to package, setting aside 3/4 cup of pasta water

2Melt butter, onions, pepper, (@4 min)

3Add 2 tsp salt, pepper, and garlic ( cook another 1 min)

4Add zucchini ( cook another 2 min)

5Add broccoli, frozen peas and carrots ( cook another 2 min)

6Add tomatoes ( cook another 2 min)

7Add pasta water ( cook about 2 min to heat pasta through)

8Remove from heat and place on serving platter

9Add cheese and drizzle with olive oil
