Ingredients

  • 1 (1 lb.) box rigatoni, cooked in salted water until tender and drained
  • 1 lb. hot Italian sausage (in bulk, not links)
  • 1 large onion, chopped
  • 1/4 lb. mushrooms, sliced
  • 1 large red pepper, seeded and chopped
  • 1 large can crushed tomatoes
  • 1/3 c. red wine
  • 1 tsp. dried oregano or Italian seasoning
  • 1/2 c. freshly chopped parsley
  • 1 1/2 c. shredded Mozzarella

Directions

    Saute sausage and onion in heavy skillet. Stir in mushrooms and red pepper. Saute over medium heat until sausage is well browned. Stir in tomatoes and red wine.

    Simmer for 15 minutes. Stir in herbs.
