- 1/2 c. sugar, divided
- 1/2 tsp. cinnamon
- 1 egg
- 1 tsp. baking powder
- 1 tsp. vanilla
- 1/4 tsp. salt
- 1/2 c. flour
- 1 (8 3/4 oz.) can sliced peaches, drained (save 1 Tbsp. juice)
Directions

1Mix 1 tablespoon sugar with cinnamon; set aside.

2In small bowl, beat remaining sugar with egg, vanilla and salt until very thick and fluffy.

3Stir together flour and baking powder.

4Stir into egg mixture until well blended, then stir in reserved juice. Pour into well-greased 8-inch layer cake pan.

5Arrange peach slices on top.

6Sprinkle with sugar-cinnamon mixture.

7Bake at 375°

8for 25 to 30 minutes or until pick inserted in center comes out clean.

9Cool on rack 5 minutes.

10Unmold and invert.
