- 1 egg
- 1 egg white
- 1 c. all-purpose flour
- 1 c. sugar
- 1 tsp. baking powder
- 3/4 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 3/4 c. pureed figs*
- 1 c. peeled, grated carrots
- 1/2 c. diced peaches, drained
- 1/2 c. seedless raisins
- 1/4 c. pecans, chopped (optional)
- vegetable cooking spray
Directions

1Preheat oven to 350°.

2Lightly beat together eggs in small bowl; set aside.

3Sift together flour, sugar, baking powder, soda, salt, cinnamon and nutmeg into large mixing bowl.

4Stir to blend. Add pureed figs, beaten eggs, carrots, peaches, raisins and nuts. Stir until blended.

5Turn into an 8-inch square pan sprayed with vegetable cooking spray.

6Bake 35 to 40 minutes or until cake tests done in center.

7Yields 12 squares.
