  • 1 can peas (pigeon or black-eyed)
  • 1 qt. rice
  • 1 1/2 pt. water
  • 2 tomatoes
  • 1 large onion
  • small piece pork fat
  • thyme, garlic, salt and pepper to taste

Directions

    Fry together the onion, tomatoes and seasoning in pork fat for 15 minutes. Add 1 1/2 pints water and peas. Simmer 15 more minutes. Add 1 quart rice and simmer for 45 to 60 minutes on low flame.
