- 1 can peas (pigeon or black-eyed)
- 1 qt. rice
- 1 1/2 pt. water
- 2 tomatoes
- 1 large onion
- small piece pork fat
- thyme, garlic, salt and pepper to taste
Directions

1Fry together the onion, tomatoes and seasoning in pork fat for 15 minutes. Add 1 1/2 pints water and peas. Simmer 15 more minutes. Add 1 quart rice and simmer for 45 to 60 minutes on low flame.
