  • 2 c. Pioneer biscuit and baking mix
  • 3 Tbsp. butter, melted
  • 1 1/2 c. milk
  • 2 eggs
  • 1/4 c. ground pecans

    Preheat lightly greased griddle or waffle iron to 350°.

    Mix milk and eggs.

    Add biscuit and baking mix and blend until batter is fairly smooth.

    Stir in melted butter and ground pecans.

    Cook pancakes 1 to 2 minutes on each side and waffles 2 to 3 minutes or until golden brown.

    Yields 12 to 14 (5-inch) pancakes or 10 to 12 (5-inch) waffles.
