Pepper Casserole

Ingredients

  • 1 1/2 lb. ground beef
  • 2 small green peppers, chopped
  • 1 medium onion, chopped
  • 2 cans whole tomatoes, chopped or pureed
  • 1/2 to 1 can water (start with 1/2 and add more if needed)
  • 1 Tbsp. black pepper or to taste
  • 4 Tbsp. Worcestershire sauce
  • 1 c. uncooked long grain rice
  • 2 c. sharp Cheddar cheese

Directions

    Combine ground beef, green peppers and onion.

    Cook over medium heat until beef is lightly browned.

    Drain.

    Add tomatoes, water, Worcestershire sauce, black pepper and rice.

    Cover and simmer until rice is done (15 to 20 minutes).

    Remove lid and continue cooking until remaining liquid is gone.

    Stir in cheese and transfer to a baking dish.

    Bake, uncovered, at 350° for 20 minutes.
