Persimmon Pudding

Ingredients

  • 1/2 c. butter, melted
  • 2 c. milk
  • 3 eggs
  • 1 tsp. soda
  • 1 tsp. cinnamon
  • 3/4 tsp. allspice
  • 2 tsp. vanilla
  • 2 c. persimmon pulp
  • 1 1/2 c. sugar
  • 1 1/2 c. flour
  • 1 tsp. baking powder
  • 1/4 tsp. cloves
  • 1/2 tsp. salt

Directions

    Mix persimmons, sugar, eggs and flour with soda, salt and spices.

    Using electric mixer, stir in milk and melted butter. Add vanilla.

    Put mixture into a greased baking dish and bake in moderate oven at 350°, but we have always found 325° to work better.

    It will take approximately 1 hour, depending upon depth of pan.
