- 1 c. persimmon pulp
- 1 c. milk
- 1/2 c. sugar
- 1 c. flour
- 1/8 tsp. salt
- small lump butter
- 1 tsp. baking powder
- 1/2 tsp. soda
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. ginger
- 1/2 c. pecans
- whipped cream
Directions

1Beat egg white until stiff; beat yolks and add together. Continue beating.

2Add persimmons, milk, sugar, flour, salt, butter, baking powder and soda.

3Beat slightly.

4Add spices and nuts.

5Bake in a 9-inch square pan or rectangular.

6Bake at 350° for 40 minutes or until a knife blade comes out clean.

7Top with whipped cream when cool.
