Pesto Fish Wraps

Ingredients

  • 10.5 oz fresh firm white fish fillets, skin removed, cut into thick strips
  • 2 tbsp store-bought pesto
  • 2 tsp olive oil
  • 4 None flour tortillas
  • 1 head baby romaine lettuce, leaves separated
  • 1 None medium ripe tomato, cut into thin wedges
  • 1 None medium ripe avocado, thinly sliced
  • 2 tbsp mayonnaise
  • None None shoestring fries, to serve
  • None None lemon or lime wedges, to serve

Directions

    Preheat oven to 350°F. Combine fish and pesto. Heat oil in a frying pan over medium heat. Cook fish, in batches, for 1-2 mins per side, or until cooked. Set aside.

    Meanwhile, wrap tortillas in foil and bake for 8 mins, or until hot.

    Arrange lettuce, fish, tomato and avocado on tortillas. Top with mayonnaise. Roll up to enclose filling. Serve with fries and citrus wedges.
