- 2 (8 oz.) pkg. cream cheese
- 2 eggs or egg substitute
- 3/4 c. sugar
- 1 Tbsp. lemon juice
- 1 tsp. vanilla extract
- 1 box vanilla wafers
Directions

1Mix eggs; then add other ingredients.

2Place one vanilla wafer in each paper cupcake liner; place liners in muffin pans.

3Pour mixture on top of each wafer (3/4 full).

4Bake at 275° for 25 minutes.

5Remove paper cup liners and freeze.

6Freezes well.
