  • 1 pound sliced beets canned or cooked
  • 3/4 cup liquid beet
  • 3/4 cup cider vinegar
  • 3/4 cup sugar
  • 1 1/2 teaspoons pickling spice
  • 10 whole cloves
  • onion 1 sm., sliced optional

Directions

    Combine beet liquid, vinegar, sugar and seasonings, in sauce pan.

    Bring to boil, reduce heat and continue boiling 1 to 2 minutes.

    Put beets into jars, pour boiling mixture over beets.

    Cool.

    Seal and refrigerate.
