Pickled Cucumbers

- 4 cucumbers, about 1 3/4 pounds
- 6 tablespoons white vinegar
- 6 tablespoons sugar
- 3/4 cup water
- Salt to taste if desired
- Freshly ground pepper to taste
- 1/4 cup finely chopped parsley
Directions

1Peel the cucumbers and cut them in half lengthwise.

2Scrape out the seeds.

3Cut the halves crosswise into thin slices.

4There should be about five cups.

5Put the cucumbers in a bowl.

6Blend the vinegar, sugar, water and salt in a small saucepan and bring to a boil, stirring until the sugar dissolves.

7Pour the liquid over the cucumbers.

8Let stand until cool.

9Chill.

10Sprinkle with pepper and parsley and serve.
