- 1 tsp. ground allspice
- 1 tsp. ground cloves
- 1 tsp. ground mace
- 1/2 tsp. cinnamon
- 1 tsp. sugar
- 2 cups champagne vinegar
- 2 cups lg. fresh oysters, shelled and cleaned
Directions

1In a 2-quart saucepan combine spices and sugar with the vinegar over high heat.

2Bring to a boil.

3Reduce to a simmer and cook 2 to 3 minutes.

4Place in refrigerator until well chilled.

5When cold, add oysters.

6Marinate overnight.

7The following day bring to a boil for 1 minute.

8Chill completely.
