- 3 c. vinegar
- 2/3 c. sugar
- 2 cans sliced beets
- 1 large sliced white onion
- 1 doz. hard-boiled eggs
- 3 to 4 small hot peppers
- 6 whole allspice
- 1/2 tsp. salt
- 12 cloves
Directions

1Bring vinegar, sugar, cloves, peppers, allspice and salt to a boil.

2Add juice from beets and simmer for 3 minutes, stirring once or twice.

3Remove from heat and cool.

4Layer beets, shelled eggs and onions in a glass jar (with a tight lid).

5Pour pickling liquid over all.

6Cover jar tightly and refrigerate.

7Pickling takes at least 2 days.
