Ingredients

  • 8 c. sliced squash
  • 2 c. sliced onions
  • 1 large green pepper, diced
  • 2 1/2 c. sugar
  • 2 c. white vinegar
  • 2 tsp. mustard seed
  • 2 tsp. celery seed
  • 1/2 tsp. prepared mustard
  • 1/2 tsp. turmeric
  • 3 Tbsp. salt

Directions

    Sprinkle salt on vegetables.

    Cover with water and let stand for 2 hours; drain.

    Heat sugar, vinegar, mustard seed, prepared mustard and turmeric to a boil.

    Pour vegetables in and bring to boil second time.

    Pack in jars and seal.

    Makes approximately 5 pints.
