Pimento Potatoes

  • 4 c. cubed potatoes
  • 4 Tbsp. butter
  • 4 Tbsp. flour (self-rising)
  • 1 1/2 tsp. salt
  • 1/4 tsp. milk
  • 1 (4 oz.) bag grated Cheddar cheese
  • 1 small jar chopped pimentos
  • 2 Tbsp. chopped onions

Directions

    Cook potatoes until done.

    Reserve potato water.

    In saucepan, melt butter, flour, salt and pepper.

    Add 1 cup reserved potato water and milk.

    Cook until almost as thick as mashed potatoes, stirring constantly.

    Add Cheddar cheese, pimentos and onions. Stir well.

    Pour over drained potatoes and stir.

    Cube 4 cups bread crumbs and pour first melted butter over them.

    Arrange on top of potatoes.

    Sprinkle with paprika and bake at 350° until crisp.
