- 4 c. cubed potatoes
- 4 Tbsp. butter
- 4 Tbsp. flour (self-rising)
- 1 1/2 tsp. salt
- 1/4 tsp. milk
- 1 (4 oz.) bag grated Cheddar cheese
- 1 small jar chopped pimentos
- 2 Tbsp. chopped onions
Directions

1Cook potatoes until done.

2Reserve potato water.

3In saucepan, melt butter, flour, salt and pepper.

4Add 1 cup reserved potato water and milk.

5Cook until almost as thick as mashed potatoes, stirring constantly.

6Add Cheddar cheese, pimentos and onions. Stir well.

7Pour over drained potatoes and stir.

8Cube 4 cups bread crumbs and pour first melted butter over them.

9Arrange on top of potatoes.

10Sprinkle with paprika and bake at 350° until crisp.
