  • 1 (2-layer) white cake mix
  • 1 (4-serving size) Jell-O coconut cream or vanilla instant pudding mix
  • 4 eggs
  • 1 c. flaked coconut
  • 1/2 c. water (with vanilla, increase water to 3/4 c., add 1 c. coconut to batter)
  • 1/3 c. Bacardi dark rum (80 proof)
  • 1/4 c. cooking oil

    mixer bowl. Beat 4 minutes at medium speed. Pour into 2 prepared layer cake pans (9-inch).
