- 3 medium zucchini
- 2 Tbsp. margarine
- 1 clove garlic, minced
- 1/2 c. onion, chopped
- 1/4 c. parsley, chopped
- 2 Tbsp. flour
- 1/4 tsp. oregano
- 1 c. Monterey Jack cheese, shredded
- 2 Tbsp. pimento, chopped
- 1/4 c. freshly grated Parmesan
Directions

1Cook whole zucchini in boiling salted water about 10 minutes or until tender.

2Drain well.

3Cut in half lengthwise.

4Scoop out centers leaving 1/4-inch thick shell.

5Chop zucchini meat.

6Saute garlic, onions and parsley in margarine in large skillet.

7Add mushrooms; cook until tender.

8Stir in flour and oregano.

9Stir in shredded cheese, pimento and chopped zucchini.

10Heat through.
