  • 1 c. crushed pineapple, juice included
  • 2 eggs
  • 1/3 c. melted butter
  • 1/3 c. white sugar
  • 1/2 tsp. vanilla
  • 2 c. sifted all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. chopped walnuts (optional)

    Beat eggs.

    Add sugar and melted butter.

    Sift flour, salt and baking powder and add alternately with pineapple.

    Mix and if nuts used, add them.

    Bake at 350° for 1 hour in 8 1/4 x 4 1/2-inch loaf pan which has been greased and floured.

    When baking time is completed, loosen loaf from sides of pan with knife and turn out on cake rack to cool.
