Pineapple Chicken

  • 7 large pieces of chicken
  • salt and pepper to taste
  • 1 large clove garlic, crushed
  • 2 Tbsp. parsley
  • 1 large can crushed pineapple
  • 8 to 10 ounces fresh sliced mushrooms
  • 1 stick margarine
  • 4 c. juice (I use tangerine and orange, mixed)

Directions

    Melt 1 stick margarine in large frypan.

    Add fresh garlic. Salt and pepper chicken to taste.

    Brown chicken quickly to a lovely color (this is not to cook chicken, only to brown and seal). When browned to golden color, remove chicken and place in baking dish.
