- 60 Ritz crackers
- 1/4 lb. butter, melted
- 8 eggs, separated
- 1 1/2 c. sugar
- 1 (No. 2) can crushed pineapple
- 1 small box lemon Jell-O
- 1 tsp. vanilla
Directions

1Crush crackers and mix with melted butter.

2Line bottom of 9 x 13-inch pan with 2/3 of this mixture.

3Beat egg yolks until light. Add 3/4 cup of the sugar and pineapple, including juice.

4Bring to a boil (2 or 3 minutes).

5Remove from heat.

6Add Jell-O.

7Stir well.

8Cool.

9Beat egg whites stiff with 3/4 cup sugar.

10Add vanilla.

11Fold into cooled egg yolk mixture.

12Pour into pan. Cover with remaining crumbs.

13Chill 24 hours or overnight.
