Pineapple-Lime Float

  • 1 (12 oz.) can pineapple juice, chilled (1 1/2 c.)
  • 1 c. water
  • 1/2 (6 oz.) can frozen limeade concentrate, thawed (1/3 c.)
  • 1 qt. lime sherbet
  • 2 (7 oz.) bottles ginger ale, chilled

Directions

    Combine pineapple juice, water and limeade concentrate. Divide pineapple mixture among 6 tall glasses.

    Spoon half of the lime sherbet into the glasses; stir gently.

    Carefully pour chilled ginger ale into each glass.

    Top with scoops of remaining lime sherbet.

    Garnish with mint leaves, if desired.
