- 2 Tbsp. (rounded) cornstarch
- 1/2 c. sugar
- 1/2 tsp. salt
- 1 can (20 oz.) crushed pineapple
- 2 egg yolks and whites, separated
- 1 Tbsp. fresh lemon juice
Directions

1Mix first 3 ingredients in saucepan; add pineapple.

2Cook until clear and thick on very low heat, 6 to 8 minutes, stir occasionally.

3Mix a little pineapple at a time to egg yolks very slowly, cook 1 minute.

4Cool slightly and add lemon juice.

5Pour in baked pie shell and top with meringue; seal well.
