Pineapple Upside-Down Cake

  • 1 white or yellow cake mix
  • 1 large can crushed pineapple
  • 1 small jar maraschino cherries
  • 1/2 c. brown sugar
  • 1 tsp. cinnamon
  • 1/4 c. coconut

Directions

    Prepare cake as directed except use only 1/2 of water and use the rest with pineapple juice.

    Take drained pineapple, brown sugar, cinnamon and coconut.

    Mix together.

    Spread into pan and add chopped cherries.

    Pour on cake mix and bake.

    Bake at 325° for 30 minutes.
