Pineapple Upside-Down Cake

- 1 white or yellow cake mix
- 1 large can crushed pineapple
- 1 small jar maraschino cherries
- 1/2 c. brown sugar
- 1 tsp. cinnamon
- 1/4 c. coconut
Directions

1Prepare cake as directed except use only 1/2 of water and use the rest with pineapple juice.

2Take drained pineapple, brown sugar, cinnamon and coconut.

3Mix together.

4Spread into pan and add chopped cherries.

5Pour on cake mix and bake.

6Bake at 325° for 30 minutes.
