  • 1 c. sugar
  • 1/4 c. vegetable shortening
  • 1 egg
  • 2 c. pinto beans, cooked and mashed well
  • 1 1/2 c. plain flour
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1 tsp. cloves
  • 1 tsp. allspice
  • 1 tsp. nutmeg
  • 2 c. raw chopped apples
  • 1 c. raisins
  • 1 c. black walnuts

    Grease and flour large tube pan or two loaf pans; preheat oven to 350°.

    Cream together in large bowl the sugar, shortening, egg and pinto beans until thoroughly blended.

    Sift together flour, soda, salt and spices; add gradually to bean mixture, beating well.

    Fold in chopped apples, raisins and black walnuts.

    Bake 1 hour and 15 minutes or until done.
