  • 1 c. pinto beans with juice
  • 4 eggs
  • 1 Tbsp. vanilla
  • 2 deep dish pie crusts
  • 1 c. coconut
  • 3 c. sugar
  • 2 sticks oleo, melted

Directions

    Mash beans until smooth.

    In separate bowl, beat eggs and all other ingredients.

    Mix well.

    Pour into pie crusts and bake at 325° for 1 hour.

    Yields 2 pies.
